2 medium zucchinis, sliced into 1/4-inch rounds

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup marinara sauce, homemade or store-bought

1 large egg

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Olive oil, for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Arrange the zucchini slices on a baking sheet lined with parchment paper. Brush lightly with olive oil and season with salt and pepper. Bake for about 20 minutes until slightly tender. Remove from the oven and let cool slightly.

      Make Ricotta Mixture: In a mixing bowl, combine the ricotta cheese, egg, garlic powder, Italian seasoning, a pinch of salt, and pepper. Mix until well combined and creamy.

        Layering: In a baking dish, spread a layer of marinara sauce on the bottom. Place a layer of baked zucchini slices over the sauce. Spoon a layer of the ricotta mixture over the zucchini and sprinkle a bit of mozzarella and Parmesan cheese on top.

          Repeat Layers: Repeat the layering process (sauce, zucchini, ricotta mixture, and cheeses) until all ingredients are used, finishing with a final layer of marinara sauce topped with the remaining mozzarella and Parmesan cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
