2 cups leftover ham, diced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons butter

3 tablespoons all-purpose flour

1 ½ cups chicken broth

½ cup milk

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 pre-made pie crust (or homemade if you prefer)

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Sauté Vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and garlic, sauté until the onion is translucent, about 5 minutes.

      Make the Roux: Stir in the flour and cook for another 1-2 minutes, stirring constantly to avoid browning.

        Add Liquids: Gradually whisk in the chicken broth and milk. Continue stirring until the mixture thickens, about 3-5 minutes.

          Combine Fillings: Add the diced ham and frozen mixed vegetables to the thickened sauce. Season with thyme, rosemary, salt, and pepper. Stir until everything is evenly coated.

            Prepare the Pie: Roll out the pie crust and place in a 9-inch pie dish. Pour the ham and vegetable mixture into the crust, spreading evenly.

              Top with Crust: If you have a second pie crust, place it over the filling and seal the edges. Cut a few slits in the top to allow steam to escape. Alternatively, create a lattice top for a decorative finish.

                Egg Wash: Beat the egg and brush it over the crust for a golden finish.

                  Bake: Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.

                    Cool and Serve: Let the pot pie cool for about 10 minutes before serving.
