2 cups leftover mashed potatoes

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (panko preferred for extra crunch)

Oil for frying (vegetable or canola)

Instructions
 

In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, and all-purpose flour. Mix until well combined.

    Crack in the eggs one at a time, mixing after each addition until the mixture is smooth.

      Season the mixture with garlic powder, onion powder, salt, and black pepper. Stir until everything is incorporated.

        Using your hands or a spoon, form small, golf ball-sized puffs from the mixture and place them on a parchment-lined baking sheet.

          Roll each puff lightly in breadcrumbs to coat all sides evenly.

            Heat about 1 inch of oil in a deep skillet or pot over medium heat. To test if the oil is ready, drop a small piece of batter into the oil; if it sizzles, it’s good to go.

              Carefully add several cheese puffs to the hot oil, ensuring not to overcrowd the pan. Fry until golden brown, about 3-4 minutes on each side. Use a slotted spoon to remove the puffs and transfer them to a paper towel-lined plate to drain excess oil.

                Repeat the frying process with the remaining puffs.

                  Serve the leftover mashed potato cheese puffs hot with your favorite dipping sauce such as sour cream, ranch dressing, or marinara.
