Ingredients
  

1 cup all-purpose flour

1/2 cup almond flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup coconut oil, melted

1/2 cup maple syrup

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 teaspoon pure vanilla extract

3/4 cup fresh blueberries (or frozen)

1 tablespoon chia seeds mixed with 3 tablespoons water (chia egg substitute)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Make the Chia Egg: In a small bowl, combine the chia seeds with water. Stir well and let sit for about 5-10 minutes until it forms a gel-like consistency.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt until fully combined.

        Combine Wet Ingredients: In another bowl, mix the melted coconut oil, maple syrup, lemon juice, lemon zest, vanilla extract, and chia egg. Whisk until smooth and creamy.

          Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the fresh blueberries, taking care not to crush them.

            Scoop Cookies: Using a tablespoon or cookie scoop, drop dollops of the dough onto the prepared baking sheet, leaving space between each cookie.

              Bake: Bake the cookies for 12-15 minutes or until the edges are golden brown. The centers might look slightly soft but will firm up as they cool.
