1 cup heavy whipping cream

1/2 cup powdered sugar

Zest of 2 lemons

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1/2 teaspoon gelatin powder (optional, for added stability)

2 tablespoons water (if using gelatin)

Prep the Gelatin (If Required): If using gelatin for extra stability, sprinkle it over 2 tablespoons of warm water and let it sit for about 5-10 minutes until it blooms.

    Cream Cheese Mixture: In a medium bowl, beat the softened cream cheese using an electric mixer until it’s smooth and creamy.

      Add Flavors: Gradually add in the powdered sugar, lemon zest, fresh lemon juice, and vanilla extract. Mix until fully combined and the mixture is fluffy.

        Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Be careful not to over-whip.

          Fold Ingredients: Gently fold the whipped cream into the cream cheese mixture, one third at a time, until fully combined. Use a spatula to maintain the airy texture.

            Incorporate Gelatin (Optional): If using bloomed gelatin, gently heat it in the microwave for a few seconds until completely liquid, then fold it into the mousse mixture until well combined.

              Chill: Spoon the mousse into individual serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
