4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 cup grated Romano cheese

1 cup breadcrumbs (preferably Italian seasoned)

3 large eggs

1/4 cup freshly squeezed lemon juice

Zest of 1 lemon

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup olive oil (for frying)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep the Chicken: Start by pounding the chicken breasts to an even thickness (about 1/2 inch) to ensure even cooking. Season both sides with salt, pepper, and garlic powder.

    Set Up the Breading Station: In a shallow dish, combine the flour with a pinch of salt and pepper. In another dish, whisk together the eggs, lemon juice, and lemon zest. In a third dish, mix the breadcrumbs with the grated Romano cheese.

      Bread the Chicken: Dip each chicken breast first into the flour, shaking off the excess. Next, immerse it in the egg mixture, allowing the excess to drip off. Finally, coat the chicken in the breadcrumb and cheese mixture, pressing gently to adhere.

        Fry the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts (you may need to do this in batches to avoid overcrowding). Cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

          Drain and Serve: Transfer the cooked chicken to a plate lined with paper towels to drain any excess oil. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra zesty kick.
