For the Cookies:

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

3 large eggs

1 cup granulated sugar

1/2 cup fresh lemon juice (about 2-3 lemons)

1 tablespoon lemon zest

1/2 cup unsalted butter, cubed

For the Crème Brûlée Topping:

1/3 cup granulated sugar (for caramelizing)

Instructions
 

Make the Lemon Curd:

    - In a medium saucepan, whisk together eggs, sugar, lemon juice, and lemon zest.

      - Cook over medium heat, stirring constantly until the mixture thickens (about 8-10 minutes) and coats the back of a spoon.

        - Remove from heat and stir in the cubed butter until fully melted and combined.

          - Pour the lemon curd into a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin), and refrigerate until set, about 2 hours.

            Prepare the Cookies:

              - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

                - In a large bowl, cream together the softened butter and sugar until light and fluffy.

                  - Beat in the egg and vanilla extract until well combined.

                    - In a separate bowl, whisk together the flour, baking powder, salt, and lemon zest. Gradually add the dry ingredients to the wet mixture until just combined.

                      - Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                        Bake the Cookies:

                          - Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
