1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep the Shrimp and Asparagus: Begin by rinsing the shrimp under cold water and patting them dry with paper towels. Trim the asparagus and cut them into 2-inch pieces.

    Heat the Olive Oil: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant but not browned.

      Add Asparagus: Toss in the asparagus pieces and stir-fry for about 4-5 minutes until they are bright green and tender-crisp. Season with salt and black pepper to taste.

        Cook the Shrimp: Push the asparagus to one side of the skillet, then add the remaining tablespoon of olive oil to the empty side. Add the shrimp, red pepper flakes (if using), lemon zest, and lemon juice. Cook for about 3-4 minutes, flipping the shrimp halfway, until they turn pink and opaque.

          Combine & Serve: Once the shrimp are cooked, stir everything together in the skillet. Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley.

            Plate It Up: Serve the lemon garlic shrimp and asparagus immediately with lemon wedges on the side for an extra zing!
