Ingredients
  

  • 1 cup fresh lemon juice squeezed from about 4-5 lemons
  • 1 cup fresh mint leaves tightly packed
  • 2 tablespoons raw agave syrup adjust sweetness to taste
  • 4 cups sparkling water chilled
  • 1/2 teaspoon sea salt to enhance flavor
  • 1 cup cucumber slices fresh for garnish
  • 1 cup ice cubes for serving
  • 1 lemon lemon slices for garnish and extra flavor
  • 1 sprig mint sprig for garnish

Instructions
 

  • Begin by juicing the lemons to obtain 1 cup of fresh lemon juice. Strain the juice to remove seeds and pulp for a smoother drink.
  • In a large mixing bowl, combine the fresh lemon juice, tightly packed mint leaves, and raw agave syrup. Use a muddler or the back of a spoon to gently crush the mint leaves, releasing their essential oils.
  • Add the chilled sparkling water to the mixture, stirring gently to combine. Ensure not to lose the carbonation by stirring too vigorously.
  • Taste the mocktail and adjust sweetness with additional agave syrup if desired, and add the sea salt to enhance the flavors.
  • Prepare serving glasses by adding a few ice cubes to each glass. Pour the lemon mint mixture over the ice.
  • Garnish each glass with cucumber slices, lemon slices, and a sprig of mint for a refreshing touch.
