Ingredients

4 boneless, skinless chicken breasts

3 tablespoons olive oil

2 lemons (zest and juice)

1 tablespoon freshly cracked black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt (adjust to taste)

1 teaspoon dried thyme (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preparation of Marinade: In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, salt, and dried thyme until well combined.

Marinate the Chicken: Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Preheat the Grill or Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C).

        Grilling/Baking:

          - For Grilling: Remove the chicken from the marinade and let the excess drip off before placing it on the grill. Grill for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the juices run clear.

            - For Baking: Place the marinated chicken in a baking dish and bake in the preheated oven for 25-30 minutes, or until fully cooked and golden brown.

Rest and Serve: Once done, remove the chicken from the heat and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.
