Ingredients
  

1 cup all-purpose flour

2 tablespoons poppy seeds

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

1/4 cup unsalted butter, melted

Zest of 1 lemon

2 tablespoons fresh lemon juice

Optional: fresh berries and whipped cream for serving

Instructions
 

In a large mixing bowl, whisk together the flour, poppy seeds, sugar, baking powder, and salt until well combined.

    In another bowl, mix the milk, egg, melted butter, lemon zest, and lemon juice until blended.

      Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Be careful not to overmix; some lumps are okay.

        Preheat a non-stick skillet or griddle over medium heat. If desired, lightly grease with cooking spray or butter.

          Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

            Flip the pancakes and cook for another 2 minutes, or until golden brown.

              Remove pancakes from skillet and keep warm. Repeat with the remaining batter.

                Serve the pancakes warm, topped with fresh berries and a dollop of whipped cream, if desired.
