2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

4 large eggs

1 cup buttermilk

¼ cup fresh lemon juice

Zest of 2 lemons

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 jar (21 oz) lemon pie filling

Powdered sugar, for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch sheet cake pan with cooking spray or butter, and set aside.

    In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.

      Add the eggs one at a time, mixing well after each addition.

        Stir in the buttermilk, fresh lemon juice, and lemon zest until combined.

          In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.

            Pour half of the batter into the prepared sheet cake pan, smoothing it out evenly.

              Carefully spread the lemon pie filling over the batter, ensuring it covers the surface evenly.

                Pour the remaining batter over the lemon pie filling and smooth the top.

                  Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the cake to cool completely in the pan on a wire rack.

                      Once cooled, dust with powdered sugar if desired. Cut into squares and serve. Enjoy the refreshing lemony goodness!
