2 ½ cups all-purpose flour

2 ½ teaspoons baking powder

½ teaspoon baking soda

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tablespoon lemon zest (about 2 lemons)

½ cup fresh lemon juice

1 teaspoon vanilla extract

1 cup buttermilk

_For the Lemon Cream Cheese Frosting:_

8 oz cream cheese, softened

½ cup unsalted butter, softened

3-4 cups powdered sugar (adjust for desired sweetness)

1 tablespoon lemon zest

3 tablespoons fresh lemon juice

1 teaspoon vanilla extract

_For Garnish:_

Lemon slices or edible flowers

Fresh mint leaves

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

    Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.

      Cream Butter and Sugar: In a separate bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed for about 3-5 minutes until it's light and fluffy.

        Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Then, stir in lemon zest, lemon juice, and vanilla extract.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined and smooth.

            Bake the Cakes: Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                Layer the Cake: Once the cakes have completely cooled, place one layer on a serving plate. Spread a layer of frosting on top, then repeat with the second layer. Place the final cake layer on top, and frost the top and sides of the cake.
