Ingredients

1 cup fresh lemon juice (about 4-6 lemons)

1/2 cup sugar (adjust to taste)

4 cups cold coconut water

1/4 cup fresh mint leaves, plus extra for garnish

1/2 cup pineapple juice

1/4 teaspoon sea salt

Ice cubes

Lemon slices and pineapple wedges for garnish

Instructions

In a small saucepan, combine the sugar and 1 cup of water. Heat over medium heat, stirring until the sugar is fully dissolved to create a simple syrup. Remove from heat and let cool.

In a large pitcher, combine the fresh lemon juice, cooled simple syrup, coconut water, pineapple juice, and sea salt. Stir well to combine all the flavors.

Gently crush the mint leaves with your fingers or a muddler to release their essential oils, then add them to the pitcher.

Fill glasses with ice cubes and pour the Lemonade Island Twist mixture over the ice.

Garnish each glass with a slice of lemon, a wedge of pineapple, and a sprig of fresh mint.

Serve immediately and enjoy your refreshing tropical drink! For an extra twist, add a splash of soda water for fizz!
