8 ounces spaghetti or fettuccine

1 pound boneless, skinless chicken breasts, diced

4 cloves garlic, minced

2 large eggs

1 cup grated Parmesan cheese (plus extra for serving)

1 lemon (zest and juice)

1/2 cup heavy cream

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional)

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt and pepper. Cook the chicken for about 5-7 minutes or until fully cooked and golden brown. Remove from the skillet and set aside.

      Sauté garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.

        Make the sauce: In a mixing bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, lemon zest, and lemon juice until smooth. Add a pinch of salt and pepper.

          Combine pasta and chicken: Return the cooked chicken to the skillet with the garlic. Add the drained pasta and mix well to combine the flavors.

            Create the carbonara: Remove the skillet from the heat and quickly pour the egg mixture over the pasta, tossing continuously to combine. The residual heat from the pasta will gently cook the eggs, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you achieve your desired consistency.

              Serve: Plate the carbonara, garnishing with freshly chopped parsley, an extra sprinkle of Parmesan cheese, and a pinch of red pepper flakes, if desired.
