Ingredients

4 large russet potatoes, baked and cooled

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup cooked bacon, chopped

1/4 cup green onions, finely sliced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Extra cheddar cheese and bacon bits for topping

Instructions

Prep the Potatoes: After baking your russet potatoes, allow them to cool. Once cooled, scoop out the insides and transfer them to a mixing bowl. Discard the skins or save them for another use.

Mix the Base: To the bowl with the potato insides, add the softened cream cheese and sour cream. Mix together until smooth and well combined.

Add Flavorings: Stir in the shredded cheddar cheese, chopped bacon, green onions, garlic powder, onion powder, salt, and pepper. Make sure to mix everything until fully incorporated.

Bake the Dip: Preheat your oven to 350°F (175°C). Transfer the potato mix to a baking dish and spread it evenly. Top with additional cheddar cheese and bacon bits for an extra loaded experience.

Cook: Bake in the preheated oven for approximately 25-30 minutes, or until the top is golden and bubbly.

Garnish and Serve: Remove from the oven and garnish with some additional green onions if desired. Serve warm with tortilla chips, crackers, or fresh vegetables.
