Ingredients
  

2 cups leftover mashed potatoes

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup green onions, chopped

1/4 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup all-purpose flour

1 egg, beaten

1/4 cup breadcrumbs (optional, for extra crunch)

Oil for frying

Instructions
 

In a large bowl, combine the leftover mashed potatoes, cheddar cheese, crumbled bacon, chopped green onions, sour cream, garlic powder, onion powder, and season with salt and pepper. Mix until everything is well combined.

    Add the flour and beaten egg to the potato mixture, mixing until just incorporated. If the mixture feels too wet, you can add a bit more flour to achieve a moldable consistency.

      Form the mixture into patties (about the size of your palm) and, if desired, coat the tops and bottoms with breadcrumbs for added texture.

        In a large skillet, heat oil over medium heat. Once hot, carefully place the potato cakes into the skillet, cooking in batches to avoid overcrowding, and fry until golden brown (about 4-5 minutes per side).

          Remove the cakes from the skillet and drain on paper towels. Keep warm in a low oven if needed until all cakes are cooked.

            Serve warm with a dollop of sour cream or your favorite dipping sauce on the side. Garnish with additional green onions if desired.
