Ingredients

2 pounds baby potatoes, halved

1 cup sour cream

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup cooked bacon, crumbled

1 cup shredded sharp cheddar cheese

1/2 cup green onions, chopped

1/2 cup cherry tomatoes, halved

Instructions

Boil the Potatoes: Place the halved baby potatoes in a large pot and cover with salted water. Bring to a boil over medium-high heat. Once boiling, reduce heat to medium and cook for 10-15 minutes or until fork-tender. Drain and let cool slightly.

Prepare the Dressing: In a mixing bowl, combine the sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper. Whisk until smooth and well blended.

Combine Ingredients: In a large mixing bowl, add the cooled potatoes. Pour the dressing over the potatoes and gently fold until all the potatoes are coated.

Add Bacon and Cheese: Stir in the crumbled bacon, shredded cheddar cheese, chopped green onions, and halved cherry tomatoes. Mix gently to combine all ingredients.

Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld. Serve chilled or at room temperature. Enjoy your loaded potato salad!
