1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1 cup cold sparkling water (adjust for thickness)

Optional: 1 tablespoon beer (for extra flavor)

Vegetable oil for frying

1 pound of white fish fillets (like cod or haddock)

Prepare the Oil: In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Make sure you have enough oil to submerge the fish.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, sea salt, black pepper, garlic powder, onion powder, and paprika. Whisk together until well combined.

      Add Liquid Ingredients: Slowly pour in the cold sparkling water, stirring gently to create a smooth batter. If using, add the optional beer for added flavor. The batter should be thick enough to coat the back of a spoon; adjust with more water if necessary.

        Coat the Fish: Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it is thoroughly coated.

          Fry the Fish: Carefully lower the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for 4-5 minutes or until the fish is golden brown and crispy. Flip halfway through for even cooking.
