1 lb ground beef (or ground turkey)

1 medium onion, diced

3 cloves garlic, minced

1 medium red bell pepper, diced

4 cups beef broth (low sodium)

1 cup cauliflower florets (fresh or frozen)

1 cup cream cheese, softened

2 cups shredded cheddar cheese

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

Salt and pepper to taste

1 teaspoon paprika

1 teaspoon Italian seasoning

2 tablespoons olive oil

Fresh chives or green onions for garnish (optional)

Cook the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.

    Add Aromatics: Stir in the diced onion, minced garlic, and diced red bell pepper. Sauté for about 5 minutes, or until the vegetables are softened.
