Ingredients
  

4 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

Juice of 2 large lemons

Zest of 1 lemon

1 teaspoon dried oregano

Salt and pepper to taste

1 large head of cauliflower (or 4 cups riced cauliflower)

2 tablespoons butter

1 cup spinach, chopped

Fresh parsley for garnish

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Prepare Cauliflower Rice: Cut the cauliflower into florets and pulse in a food processor until it resembles rice (or use pre-riced cauliflower). In a large skillet, melt butter over medium heat. Add the riced cauliflower and cook for about 5-7 minutes, stirring occasionally until tender. Stir in the chopped spinach and cook until wilted. Season with salt and pepper, then set aside.

      Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove chicken from marinade, discarding the marinade. Cook chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown and cooked through.

        Serve: Slice the chicken and serve it over the cauliflower rice. Garnish with fresh parsley for extra color and flavor.
