Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

Zest and juice of 2 lemons

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Lemon wedges and fresh herbs for garnish

Instructions

In a medium bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, pepper, and red pepper flakes.

Place chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring they are well coated. Seal or cover and refrigerate for at least 1 hour (or up to 4 hours).

Preheat your grill to medium-high heat.

Remove the chicken from the marinade, allowing excess to drip off. Discard the marinade.

Place the chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Once cooked, remove from the grill and let the chicken rest for 5 minutes before slicing.

Serve garnished with lemon wedges and additional fresh herbs, if desired.
