Ingredients
  

1.5 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cups broccoli florets

2 cups cauliflower, chopped

2 medium carrots, sliced (optional for very low carb)

1 red bell pepper, diced

1 tablespoon tomato paste

4 cups beef broth (low sodium)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and sear them until browned on all sides. Remove the beef from the pot and set it aside.

    In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.

      Add the tomato paste, stirring to combine, then add in the beef broth, making sure to scrape up any browned bits from the bottom of the pot.

        Return the beef to the pot and add the chopped broccoli, cauliflower, carrots (if using), and red bell pepper.

          Season the stew with dried thyme, paprika, salt, and pepper. Bring the mixture to a boil.

            Lower the heat and let it simmer for about 1.5 hours or until the beef is tender and the veggies are cooked to your liking.

              Taste and adjust the seasoning if necessary. Remove from heat and garnish with chopped fresh parsley before serving.
