Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes, undrained

1 can (4 oz) diced green chilies

1 cup beef broth (low sodium)

1 cup cauliflower florets (fresh or frozen)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon oregano

½ cup shredded cheese (cheddar or Mexican blend)

Optional toppings: sour cream, avocado, cilantro, lime wedges, jalapeños

Instructions
 

In a large pot or Dutch oven, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat if necessary.

    Add diced onion, minced garlic, and bell pepper to the pot. Sauté for about 5 minutes until vegetables are softened.

      Stir in the diced tomatoes, green chilies, beef broth, and cauliflower florets. Mix in the chili powder, cumin, paprika, salt, black pepper, and oregano.

        Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 20-25 minutes, allowing the flavors to meld and the cauliflower to become tender.

          Once ready, taste and adjust seasonings as desired. If you prefer a thicker soup, use an immersion blender to purée some of the mixture, then stir it back in.

            Serve hot, garnished with shredded cheese and your choice of optional toppings like sour cream, avocado, cilantro, lime wedges, and jalapeños.
