1 1/2 cups rolled oats

1/2 cup natural peanut butter (unsweetened)

1/4 cup honey or maple syrup (or a sugar-free alternative like monk fruit sweetener)

1/4 cup unsweetened cocoa powder

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 cup unsweetened shredded coconut (optional)

1/4 cup chopped nuts or seeds (like almonds, walnuts, or pumpkin seeds)

A pinch of salt

Dark chocolate chips or cacao nibs (for topping, optional)

Instructions
 

Prepare the Base:

    In a large mixing bowl, combine the rolled oats, unsweetened cocoa powder, and cinnamon. Mix well until all dry ingredients are evenly distributed.

      Combine Wet Ingredients:

        In a separate bowl, add the natural peanut butter, honey (or your sweetener of choice), vanilla extract, and a pinch of salt. Use a microwave to warm this mixture for about 15-20 seconds to soften the peanut butter for easier mixing.

          Mix Everything Together:

            Pour the warm peanut butter mixture into the bowl with dry ingredients. Stir well until everything is combined and forms a sticky dough. If using, fold in the shredded coconut and chopped nuts or seeds at this stage.

              Shape the Cups:

                Line a muffin tin with silicone or paper liners. Using your hands, scoop out portions of the mixture and press them firmly into the muffin cups, creating a slight indent in the center if desired.

                  Chill:
