Ingredients
  

For the Lemon Curd:

1/2 cup fresh lemon juice (about 4 lemons)

Zest of 2 lemons

1 cup granulated sugar

4 large eggs

1/2 cup unsalted butter (cubed)

For the Cookies:

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter (softened)

1/2 cup powdered sugar

1 large egg yolk

1 teaspoon vanilla extract

1 tablespoon lemon zest

For the Crème Brûlée Topping:

1/4 cup granulated sugar (for caramelizing)

Instructions
 

Prepare the Lemon Curd:

    - In a medium saucepan, whisk together lemon juice, lemon zest, sugar, and eggs until well combined.

      - Add the cubed butter and cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 10–15 minutes. Be careful not to allow the mixture to boil.

        - Once thickened, remove from heat and strain through a fine-mesh sieve into a bowl to remove any lumps. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Chill in the refrigerator for at least 2 hours.

          Make the Cookie Dough:

            - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

              - In a small bowl, whisk together the flour, baking soda, and salt. Set aside.

                - In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.

                  - Beat in the egg yolk, vanilla extract, and lemon zest until combined.

                    - Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.

                      Assemble the Cookies:

                        - Using a small cookie scoop or spoon, drop dough balls onto the prepared baking sheet, spacing them approximately 2 inches apart.

                          - Make a small indentation in the center of each cookie and fill it with about a teaspoon of the chilled lemon curd.

                            - Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.

                              Brûlée the Top:

                                - Once the cookies are completely cooled, sprinkle a thin layer of granulated sugar on top of the lemon curd in each cookie.

                                  - Using a kitchen torch, carefully caramelize the sugar until it bubbles and turns golden brown. If you don't have a torch, you can place the cookies under a broiler for 1–2 minutes, watching closely to prevent burning.

                                    Serve:
