8 oz elbow macaroni

2 tbsp unsalted butter

2 tbsp all-purpose flour

2 cups whole milk

1 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper (optional)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

2 tbsp olive oil (optional for topping)

Instructions
 

Cook the pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the cheese sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until it's bubbly but not browned.

      Add milk and spices: Gradually pour in the milk, whisking constantly to avoid lumps. Stir in the Dijon mustard, garlic powder, onion powder, cayenne pepper (if using), and season with salt and pepper. Cook until the mixture thickens and bubbles, about 5-7 minutes.

        Add the cheese: Remove the pot from heat and stir in the sharp cheddar and mozzarella cheese until melted and creamy.

          Combine pasta and sauce: Add the drained macaroni to the cheese sauce, stirring well to coat the pasta evenly.

            For a baked option: Preheat your oven to 350°F (175°C). Transfer the mac and cheese into a greased baking dish. In a small bowl, mix breadcrumbs with olive oil and sprinkle evenly over the top of the mac and cheese. Bake for 20-25 minutes, or until the topping is golden brown and crispy.
