The magic of lemon cobbler lies not just in its refreshing flavor, but also in the unique method of layering that creates its signature texture. When preparing this dessert, you will pour the lemon mixture over the batter, which may seem counterintuitive at first. However, this technique is essential. As the cobbler bakes, the lemon mixture sinks to the bottom and interacts with the batter, creating a delightful custardy layer beneath a golden crust.

1 cup granulated sugar

2 teaspoons baking powder

½ teaspoon salt

1 cup whole milk

½ cup unsalted butter, melted

2 cups fresh lemon juice (about 8-10 lemons)

Zest of 2 lemons

1 cup powdered sugar (for dusting)

Whipped cream or vanilla ice cream (for serving, optional)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.

Pour the batter into the prepared baking dish, spreading it evenly across the bottom.

In another bowl, whisk together the fresh lemon juice and lemon zest to create a tangy lemon mixture.

Carefully pour the lemon mixture over the batter in the baking dish. Do not stir.

Bake in the preheated oven for 35-40 minutes, or until the cobbler is golden and the edges are bubbling.

Remove from the oven and allow it to cool for about 10-15 minutes before serving.

Dust with powdered sugar and serve warm with whipped cream or vanilla ice cream if desired.
