Make-Ahead Freezer Lasagna

A hearty and protein-packed lasagna that can be prepared in advance and stored in the freezer for a quick meal.

Ingredients
  

  • 9 lasagna noodles lasagna noodles no-boil noodles work best
  • 1 pound ground beef or ground turkey for a leaner option
  • 2 cups ricotta cheese use part-skim for lower fat
  • 2 cups mozzarella cheese shredded
  • 1 cup parmesan cheese grated
  • 2 cups marinara sauce store-bought or homemade
  • 1 egg egg large
  • 1 tablespoon Italian seasoning dried

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  • In a mixing bowl, combine ricotta cheese, egg, Italian seasoning, and half of the parmesan cheese. Mix until smooth.
  • Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
  • Layer three lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the ground beef, a layer of marinara sauce, and one-third of the mozzarella cheese.
  • Repeat the layering process with three more noodles, the remaining ricotta mixture, the remaining ground beef, more marinara sauce, and another third of the mozzarella cheese.
  • Top with the final three noodles, remaining marinara sauce, and the rest of the mozzarella and parmesan cheese.
  • Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
  • Let the lasagna cool completely before slicing into portions and freezing.

Notes

To store, cover tightly with plastic wrap and then aluminum foil. Lasagna can be frozen for up to 3 months. To reheat, thaw in the refrigerator overnight and bake at 350°F (175°C) until heated through, about 25-30 minutes.
