Mango and Dragon Fruit Chia Pudding

1 cup coconut milk (or almond milk)

1/4 cup chia seeds

1 ripe mango, diced

1 small dragon fruit, diced

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the coconut milk, chia seeds, honey or maple syrup, vanilla extract, and a pinch of salt. Whisk until well blended.

    Allow the mixture to sit for about 5 minutes, then whisk again to prevent the chia seeds from clumping together.

      Cover the bowl and refrigerate for at least 2 hours or overnight, letting the chia seeds expand and create a pudding-like consistency.

        After refrigerating, check the pudding's thickness. If it’s too thick, you can stir in a little more coconut milk until you reach your desired consistency.

          To assemble, layer the chia pudding in serving glasses with diced mango and dragon fruit. Start with a layer of chia pudding, followed by a layer of mango, then another layer of chia pudding, and finish with a layer of dragon fruit on top.

            Garnish with fresh mint leaves for a pop of color and added freshness.

              Serve immediately or chill for another 30 minutes for a refreshing treat.
