For the Mango Bars:

1 ½ cups whole wheat flour

½ cup unsweetened shredded coconut

½ cup granulated sugar

½ cup brown sugar, packed

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 cup ripe mango puree (about 2 ripe mangoes)

Zest of 1 lime

For the Lime Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lime juice

Zest of 1 lime

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a mixing bowl, whisk together the whole wheat flour, shredded coconut, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, combine the melted butter, eggs, and vanilla extract. Mix until smooth, then stir in the mango puree and lime zest.

        Combine Mixtures: Pour the wet ingredient mixture into the dry ingredients. Gently fold everything together until just combined. Do not overmix!

          Bake: Pour the batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

            Cool: Once baked, remove the bars from the oven and allow them to cool in the pan for about 10-15 minutes. Then, lift the bars out using the parchment overhang and place on a wire rack to cool completely.

              Prepare Lime Glaze: While the bars are cooling, prepare the lime glaze. In a small bowl, combine the powdered sugar, fresh lime juice, and lime zest. Whisk until smooth, adjusting with more lime juice or powdered sugar to achieve your desired consistency.

                Glaze the Bars: Once the mango bars are completely cool, drizzle the lime glaze over the top. Let it set for a few minutes before slicing the bars into squares.

                  Serve: Serve the mango bars chilled or at room temperature. Enjoy the tropical flavors!
