For the Cake:

1 cup all-purpose flour

1 ½ teaspoons baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup milk

For the Tres Leches Mixture:

1 can (14 oz) sweetened condensed milk

1 can (12 oz) evaporated milk

1 cup whole milk

1 cup mango puree (fresh or canned)

1 teaspoon ground cardamom (optional)

For the Topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1 cup diced fresh mango

Mint leaves for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    Make the Cake Batter: In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla. Gradually add the flour mixture and milk alternately until just combined.

      Bake the Cake: Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan.

        Prepare the Tres Leches Mixture: In a mixing bowl, combine the sweetened condensed milk, evaporated milk, whole milk, mango puree, and ground cardamom. Whisk until well blended.

          Soak the Cake: Once the cake has cooled, use a fork to poke it all over. Gradually pour the tres leches mixture over the cake, allowing it to soak in. Let the cake absorb the milk mixture for at least 2 hours, or ideally overnight in the refrigerator.

            Whip the Cream: In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form.

              Assemble the Cake: Spread the whipped cream over the soaked cake. Top with diced fresh mango and garnish with mint leaves if desired.
