Ingredients

1 cup almond milk (or any plant-based milk)

1/4 cup chia seeds

2 tablespoons matcha green tea powder

2 tablespoons maple syrup (or honey)

1 ripe mango, diced

1 teaspoon vanilla extract

A pinch of sea salt

Fresh mint leaves (for garnish)

Instructions

Prepare the Base: In a medium mixing bowl, whisk together the almond milk, matcha powder, maple syrup, vanilla extract, and sea salt until well combined and smooth, ensuring there are no lumps of matcha.

Add Chia Seeds: Gradually stir in the chia seeds until fully incorporated. Let the mixture sit for about 5 minutes, then stir again to prevent clumping.

Refrigerate: Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Refrigerate for at least 4 hours or overnight, allowing the chia seeds to expand and thicken the pudding.

Prepare the Mango: While the pudding sets, peel and dice the ripe mango into small cubes. You can reserve a few slices for garnish if desired.

Assemble: Once the chia pudding is set, give it a good stir to break up any clumps. Spoon the pudding into serving bowls or glasses, layering it with the diced mango.

Garnish & Serve: Top each bowl with fresh mango slices, a sprinkle of matcha powder (if desired), and garnish with mint leaves. Serve chilled for a refreshing dessert or breakfast!
