For the Cake:

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

For the Tres Leches Mixture:

1 can (12 oz) evaporated milk

1 can (14 oz) sweetened condensed milk

1 cup whole milk

1 cup fresh mango puree (about 2 ripe mangoes)

For the Topping:

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

Fresh mango slices for garnish

Mint leaves for garnish (optional)

Instructions
 

Prepare the Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

      - In a bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.

        - In another large bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy.

          - Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla.

            - Gradually add the dry ingredients to the butter mixture alternating with buttermilk until well combined. Ensure there are no lumps.

              - Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.

                Prepare the Tres Leches Mixture:

                  - In a medium bowl, whisk together the evaporated milk, condensed milk, whole milk, and mango puree until smooth.

                    Assemble the Cake:

                      - Once the cake is completely cool, poke holes all over the surface using a fork or skewer.

                        - Slowly pour the tres leches mixture over the cake, ensuring all the holes soak up the milk. Let it rest in the refrigerator for at least 2 hours, preferably overnight.

                          Make the Topping:

                            - In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

                              - Spread the whipped cream over the chilled cake evenly.

                                Garnish and Serve:

                                  - Decorate with fresh mango slices and mint leaves, if desired. Cut into squares and serve chilled. Enjoy your tropical delight!
