3 ripe bananas, mashed

1/3 cup melted coconut oil (can substitute with vegetable oil)

1/2 cup pure maple syrup

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1 1/2 cups all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the mashed bananas and melted coconut oil, stirring until well blended.

      Add the maple syrup, eggs, and vanilla extract to the banana mixture. Whisk until everything is smoothly incorporated.

        In another bowl, mix together the flour, baking soda, sea salt, and ground cinnamon.

          Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined; do not overmix.

            If desired, fold in the chopped walnuts or pecans and chocolate chips for added texture and flavor.

              Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

                Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
