Maple Sriracha Salmon Bites

Ingredients
  

- 1 lb (450g) fresh salmon fillet, skinless and boneless

- 1/4 cup pure maple syrup

- 2 tablespoons Sriracha sauce (adjust for spice preference)

- 1 tablespoon soy sauce (low-sodium recommended)

- 1 tablespoon fresh lime juice

- 1 teaspoon garlic powder

- 1/2 teaspoon ground ginger

- 1/4 teaspoon ground black pepper

- 1 tablespoon olive oil or cooking spray

- 1/4 cup green onions, chopped (for garnish)

- Sesame seeds (for garnish)

Instructions
 

1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    2. Prepare Marinade: In a small bowl, whisk together the maple syrup, Sriracha sauce, soy sauce, lime juice, garlic powder, ground ginger, and black pepper until well combined.

      3. Cut Salmon: Cut the salmon fillet into bite-sized cubes, about 1 inch in size. This ensures they cook evenly and absorb the flavors of the marinade.

        4. Marinate Salmon: Place the salmon cubes in a bowl or ziploc bag, and pour the marinade over them. Gently toss to coat all the pieces. Let it marinate for about 10-15 minutes, allowing the flavors to meld.

          5. Bake Salmon Bites: Arrange the marinated salmon pieces in a single layer on the prepared baking sheet. If using olive oil, drizzle it over the salmon before baking. Bake in the preheated oven for 8-10 minutes, or until the salmon is cooked through and flaky.

            6. Garnish: Once done, remove from the oven and sprinkle with chopped green onions and sesame seeds for an extra burst of flavor and color.

              7. Serve: Serve the Maple Sriracha Salmon Bites warm, either as an appetizer, in a salad, or alongside steamed veggies and rice for a complete meal.

                Notes

                - Substitutions: You can use honey instead of maple syrup if you're looking for a different sweetness profile. For a gluten-free option, substitute the soy sauce with tamari sauce.
                - Spice level: Adjust the amount of Sriracha to suit your heat preference. For milder bites, you can reduce it, or for a smoky flavor, add a touch of smoked paprika.
                - Storage: Leftover bites can be stored in an airtight container in the fridge for up to 2 days. Reheat gently in the microwave or in a skillet over low heat.
