1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup buttermilk

Zest of 1 lime

¼ cup fresh lime juice

1 teaspoon baking powder

½ teaspoon vanilla extract

For the Margarita Frosting:

½ cup unsalted butter, softened

3 cups powdered sugar

2 tablespoons fresh lime juice

2 tablespoons tequila (optional)

1 teaspoon lime zest

Pinch of salt

For Garnish:

Lime wedges or slices

Coarse sea salt (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake tin with cupcake liners.

    Mix the Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.

        Add Eggs and Flavors: Beat in the eggs one at a time, mixing until fully incorporated. Add the vanilla extract, lime zest, and lime juice. Mix until well combined.

          Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

            Fill Cupcake Liners: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

              Bake the Cupcakes: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

                Make the Frosting: In a large mixing bowl, beat the softened butter until smooth. Gradually add powdered sugar, mixing until well blended. Stir in lime juice, tequila, lime zest, and a pinch of salt. Beat until the frosting is fluffy.

                  Frost the Cupcakes: Once the cupcakes have cooled completely, generously frost each cupcake with the margarita frosting.
