Ingredients

2 pounds russet potatoes, peeled and cubed

1/2 cup sour cream

1/4 cup unsalted butter, softened

1/2 cup whole milk (or half-and-half for extra creaminess)

Salt, to taste

Freshly ground black pepper, to taste

2 cloves garlic, minced (optional)

Chives or parsley, chopped, for garnish

Instructions

Prepare the Potatoes: Place the peeled and cubed russet potatoes in a large pot. Cover the potatoes with cold water, and add a generous pinch of salt.

Boil the Potatoes: Bring the water to a boil over medium-high heat. Once boiling, reduce the heat and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender.

Drain and Heat: Drain the potatoes in a colander and let them sit for a minute to steam off any excess water.

Mash the Potatoes: Return the drained potatoes to the pot. Add the softened butter, sour cream, and milk (or half-and-half). If using garlic, add it at this stage.

Mix: Using a potato masher or electric mixer, mash the potatoes until they reach your desired creaminess. Avoid over-mashing for a lighter texture.

Season: Add salt and freshly ground black pepper to taste, adjusting according to your preference.

Garnish and Serve: Spoon the mashed potatoes into a serving bowl. Garnish with chopped chives or parsley for a pop of color.

Enjoy: Serve alongside your favorite main dish and enjoy the creamy, tangy goodness!
