Meal Prep for Weight Loss: Lentil Soup

Ingredients
  

  • 1 cup green lentils rinsed and drained
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth low sodium
  • 1 can canned tomatoes 14.5 oz, diced
  • 2 cups spinach fresh or frozen
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Instructions
 

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion, diced carrots, and diced celery, and sauté for about 5 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the rinsed lentils, vegetable broth, canned tomatoes, salt, and black pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 25 minutes or until lentils are tender. Stir in the spinach before serving.

Notes

This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. Adjust seasoning to your preference.
