4 bone-in pork chops (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup apple cider

2 tablespoons Dijon mustard

2 tablespoons maple syrup

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme leaves

½ cup chicken broth

Instructions
 

Prepare the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and black pepper.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove the chops from the skillet and set aside.

      Sauté the Onions and Garlic: In the same skillet, reduce the heat to medium and add the sliced onions. Sauté for about 5 minutes, until softened. Add the minced garlic and sauté for an additional minute until fragrant.

        Make the Apple Cider Reduction: Pour in the apple cider, scraping any brown bits from the bottom of the skillet. Stir in the Dijon mustard, maple syrup, rosemary, thyme, and chicken broth. Bring to a simmer.

          Return the Pork Chops: Place the seared pork chops back in the skillet, spooning some of the sauce over the top. Reduce the heat to low, cover, and cook for about 10-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

            Serve: Once cooked, remove the pork chops from the skillet and let them rest for a few minutes. Meanwhile, increase the heat to medium-high and let the sauce simmer for an additional 3-5 minutes to thicken slightly. Serve the pork chops drizzled with the apple cider reduction sauce.
