Ingredients
  

  • 1 pound boneless, skinless chicken breast cut into bite-sized pieces
  • 1 cup red bell pepper sliced
  • 1 cup zucchini sliced into half-moons
  • 1 cup cherry tomatoes halved
  • 1 tablespoon dried oregano
  • 1 tablespoon balsamic vinegar for added flavor
  • 3 cloves garlic minced
  • 2 tablespoons olive oil for stir-frying
  • 1/2 teaspoon red pepper flakes for a spicy kick
  • 1 cup feta cheese crumbled, for topping
  • salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large non-stick skillet over medium-high heat. Add the bite-sized chicken pieces and season with salt, pepper, and half of the dried oregano. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  • Add the minced garlic, red pepper flakes, sliced bell pepper, and zucchini to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are slightly tender but still crisp.
  • Stir in the cherry tomatoes and balsamic vinegar into the skillet. Cook for another 2 minutes until the tomatoes are warmed through and the mixture is well combined.
  • Remove the skillet from heat and sprinkle the remaining oregano and crumbled feta cheese on top. Toss gently to combine.

Notes

Tip 1: For extra flavor, marinate the chicken in olive oil, lemon juice, and herbs for 30 minutes before cooking.
Tip 2: Leftovers can be stored in the fridge for up to 3 days and reheated on the stovetop.
