Ingredients

1 cup unsalted butter, softened

1/2 cup powdered sugar

2 teaspoons vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

1 cup mini marshmallows

1 cup finely chopped nuts (walnuts or pecans recommended)

1/2 cup powdered sugar (for rolling)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and 1/2 cup powdered sugar until light and fluffy, about 3-4 minutes.

Add Vanilla: Mix in the vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the butter mixture, mixing until just combined.

Fold in Marshmallows and Nuts: Gently fold in the mini marshmallows and chopped nuts until evenly distributed throughout the dough.

Shape the Cookies: Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake the Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden but the centers appear soft.

Roll in Powdered Sugar: Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack. While still warm, roll each cookie in the remaining 1/2 cup of powdered sugar to create a snowy coating.

Cool Completely: Let the cookies cool completely on the rack. Once cool, you can re-roll them in powdered sugar for an extra snowy appearance if desired.

Serve and Enjoy: These Merry Marshmallow Snowball Cookies are best enjoyed fresh and can be stored in an airtight container for up to a week. Share them with friends and family or enjoy them during festive gatherings!
