1 lb flank steak or skirt steak

1/4 cup olive oil

3 cloves garlic, minced

1 small jalapeño, minced (adjust for spice preference)

Juice of 2 limes

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

4 bolillo rolls (or any crusty bread)

1 cup avocado slices

1/2 cup fresh cilantro, chopped

1/2 cup red onions, thinly sliced

1 medium tomato, thinly sliced

Salsa or pico de gallo, for serving

Instructions
 

Marinate the Steak: In a medium bowl, whisk together olive oil, minced garlic, jalapeño, lime juice, cumin, chili powder, salt, and pepper. Add the flank or skirt steak, ensuring it is well coated. Cover and marinate in the fridge for at least 1 hour, ideally overnight for maximum flavor.

    Cook the Steak: Preheat a grill or a skillet over high heat. Remove the steak from the marinade and let excess drip off. Grill the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness. Use a meat thermometer for accuracy (130°F for medium-rare). Once cooked, let it rest for 5 minutes before slicing.

      Prepare the Sandwiches: While the meat rests, slice the bolillo rolls in half. Optionally, you can lightly toast them on the grill or in a toaster for added crunch.

        Assemble the Sandwiches: Thinly slice the rested steak against the grain. Layer sliced steak on the bottom half of each toasted bolillo roll. Top with avocado slices, fresh cilantro, red onions, and tomato slices.
