4 cups fresh or frozen corn kernels

1 cup mayonnaise

1 cup sour cream

1 cup crumbled Cotija cheese (plus more for topping)

1/2 cup chopped fresh cilantro

1/4 cup lime juice (about 2 limes)

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup crushed tortilla chips (plus more for topping)

1/2 cup diced jalapeños (fresh or pickled, for garnish)

Lime wedges (for serving)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 2-quart casserole dish with cooking spray or butter.

    In a large mixing bowl, combine the corn, mayonnaise, sour cream, Cotija cheese, cilantro, lime juice, chili powder, smoked paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Stir until well combined.

      Gently fold in the crushed tortilla chips, ensuring they are evenly distributed throughout the mixture.

        Pour the corn mixture into the prepared casserole dish, spreading it out evenly.

          Bake in the preheated oven for 25-30 minutes, or until the top is slightly golden and the edges are bubbling.

            Remove the casserole from the oven and let it cool for about 5 minutes.

              Before serving, sprinkle additional Cotija cheese and crushed tortilla chips on top, and garnish with diced jalapeños.
