Ingredients

2 ¾ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp pure vanilla extract

1 tsp almond extract

Red and pink food coloring

1 cup powdered sugar (for decorating)

2 tbsp milk (for icing consistency)

Mini chocolate chips (for decoration)

Heart-shaped cookie cutters (Mickey and Minnie on the side)

Instructions

Preheat and Prep: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.

Add Wet Ingredients: Beat in the egg, vanilla extract, and almond extract until well incorporated.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Divide the dough in half.

Color the Dough: Leave one half of the dough plain. Add a few drops of red and pink food coloring to the other half and knead until the color is evenly distributed.

Roll Out the Dough: On a lightly floured surface, roll out both dough halves to about ¼ inch thick. Cut out heart shapes using your cookie cutters. For Mickey and Minnie, use the larger heart for the body and smaller circles for ears.

Bake the Cookies: Arrange the cookie shapes on prepared sheets and bake for 8-10 minutes or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Prepare the Icing: In a bowl, mix powdered sugar with milk until smooth and drizzle-able. Adjust consistency with more sugar or milk as needed.

Decorate Cookies: Once the cookies are completely cool, decorate with the icing. Use mini chocolate chips for eyes and embellish with additional sugar sprinkles if desired.

Serve: Allow the decorated cookies to sit for about 30 minutes to let the icing set. Present your Mickey and Minnie Valentine's cookies on a sweet platter and enjoy!
