2 packs (25 oz) refrigerated cheese ravioli

1 lb Italian sausage (mild or spicy, as preferred)

1 small onion, diced

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

1 tsp dried oregano

1 tsp dried basil

1 tsp sugar (to balance acidity)

Salt and pepper to taste

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Sausage: In a large skillet over medium heat, add the Italian sausage. Cook until browned, breaking it up with a wooden spoon. Drain excess fat if necessary.

      Sauté Aromatics: Add the diced onion to the skillet and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Make the Sauce: Stir in the crushed tomatoes, tomato sauce, oregano, basil, sugar, and season with salt and pepper. Let the sauce simmer on low heat for 10-15 minutes, allowing the flavors to meld.

          Layer the Casserole: In a 9x13 inch baking dish, spread a thin layer of the sauce mixture on the bottom. Place half of the ravioli on top, then pour half of the remaining sauce over the ravioli. Sprinkle a layer of mozzarella and Parmesan cheese. Repeat the layers with the remaining ravioli, sauce, and cheeses, finishing with mozzarella on top.

            Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 15-20 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Let the casserole cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired, and serve hot.
