1 pound beef tenderloin, trimmed and cut into 1-inch cubes

1 tablespoon olive oil

Salt and pepper, to taste

8 ounces cremini or button mushrooms, finely chopped

1 shallot, minced

2 cloves garlic, minced

2 tablespoons Dijon mustard

1 tablespoon fresh thyme leaves

1 sheet of puff pastry (thawed)

1 egg, beaten (for egg wash)

4 ounces pâté (optional)

Fresh parsley, for garnish

Sear the Beef: Heat olive oil in a skillet over medium-high heat. Season the beef cubes with salt and pepper, then add to the skillet. Sear for 2-3 minutes until browned on all sides. Remove from heat and allow to cool slightly.

    Prepare the Mushroom Mixture: In the same skillet, add the chopped mushrooms, shallot, and garlic. Cook over medium heat until the mushrooms have released their moisture and are golden brown (about 8-10 minutes). Stir in Dijon mustard and thyme. Season with salt and pepper, then remove from heat and let cool.

      Roll Out Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to about 1/8 inch thick. Cut the pastry into 3-inch squares.

        Assemble the Bites: If using, spread a small amount of pâté on each square of puff pastry. Place a seared beef cube on top and add a spoonful of the mushroom mixture. Fold the corners of the pastry over the filling to create a little bundle, pinching to seal.

          Brush and Bake: Preheat the oven to 400°F (200°C). Place the wrapped bites on a parchment-lined baking sheet. Brush the tops with the beaten egg for a golden finish. Bake for 15-20 minutes or until the pastry is golden brown and flaky.
