1 cup all-purpose flour

1/2 cup cornmeal

1 tablespoon sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/4 cup vegetable oil

1 large egg

1 cup shredded mozzarella cheese

1 cup chopped pepperoni or your choice of toppings (bell peppers, olives, mushrooms)

1 cup marinara sauce (plus extra for serving)

Italian seasoning (optional, for topping)

Cooking spray or oil for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin with cooking spray or oil. This will help the pizza cupcakes come out easily.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix together the milk, vegetable oil, and egg until fully incorporated.

        Combine Mixtures: Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to over-mix; a few lumps are okay!

          Add Cheese and Toppings: Fold in the shredded mozzarella cheese and your choice of toppings (pepperoni, bell peppers, olives, etc.). The mixture should be thick and chunky.

            Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about halfway. Make a small indentation in the center of each filled cup using your finger or the back of a spoon.

              Add Marinara Sauce: Spoon a small amount of marinara sauce into each indentation, covering it with a little bit of the batter if desired.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Once baked, let the mini deep dish pizza cupcakes cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm with extra marinara sauce on the side for dipping. Sprinkle with Italian seasoning if desired.
