Mini-Quiches with Three Types of Cheese

This mini-quiches with three types of cheese is a simple breakfast recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients

1 pre-made pie crust or puff pastry

4 large eggs

1 cup heavy cream

1/2 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1/2 cup grated Parmesan cheese

1/2 cup diced bell peppers (red and green)

1/4 cup finely chopped green onions

Salt and pepper to taste

Optional: fresh herbs (such as thyme or basil) for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Pie Crust: Roll out the pie crust or puff pastry on a floured surface, then cut out circles using a pastry cutter or a glass. Place the circles into a muffin tin, pressing them down gently to form a shell.

Mix the Filling: In a large mixing bowl, whisk together the eggs and heavy cream until well combined.

Add the Cheeses: Stir in the cheddar, feta, and Parmesan cheeses into the egg mixture. Make sure everything is well distributed.

Add Vegetables: Fold in the diced bell peppers and chopped green onions. Season with salt and pepper according to taste. Feel free to add the optional fresh herbs for extra flavor.

Fill the Shells: Spoon the cheese and vegetable mixture evenly into each pie crust shell, filling them just to the top.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the quiches are puffed and golden brown.

Cool and Serve: Remove the mini-quiches from the oven and allow them to cool in the tin for about 5 minutes. Carefully remove them and place them on a serving platter.

Garnish: Optionally, sprinkle with additional fresh herbs before serving. Enjoy warm or at room temperature!
