Ingredients

1 cup unsalted butter, softened

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

1 teaspoon peppermint extract

2 cups all-purpose flour

1/2 teaspoon salt

1 cup mini chocolate chips

1/2 cup crushed peppermint candies (for topping)

Additional powdered sugar for rolling

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, approximately 3-4 minutes.

Add Extracts: Mix in the vanilla extract and peppermint extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt. Gradually add this mixture to the butter mixture, mixing until just combined.

Fold in Chocolate Chips: Gently fold in the mini chocolate chips, ensuring they’re evenly distributed throughout the dough.

Shape the Cookies: Using a tablespoon or a cookie scoop, portion out the dough and roll it into balls (about 1 inch in diameter). Place them on the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes or until the edges are set and the bottoms are lightly golden.

Coat with Powdered Sugar: Allow the cookies to cool for 5 minutes on the baking sheet, then roll them in powdered sugar while still warm. Do this again just before serving to achieve a snowy finish.

Top with Crushed Peppermint: For a festive touch, sprinkle each cookie with crushed peppermint candies before they cool completely.

Cool and Serve: Transfer the cookies to a wire rack to cool completely. Enjoy these delicious Mint Chocolate Chip Snowball Cookies with a cup of tea or coffee, or package them as sweet gifts for the holidays!
