1/2 cup chia seeds

2 cups unsweetened almond milk (or any milk of your choice)

2 tablespoons cocoa powder

1 tablespoon instant coffee granules (adjust to taste)

3 tablespoons maple syrup (or honey, for sweetness)

1 teaspoon vanilla extract

Pinch of salt

Optional toppings: Whipped coconut cream, dark chocolate shavings, or fresh berries

Instructions
 

In a mixing bowl, combine the almond milk, cocoa powder, instant coffee, maple syrup, vanilla extract, and salt. Whisk until everything is well mixed and the cocoa and coffee granules are dissolved.

    Add the chia seeds to the mixture and stir well to ensure they are evenly distributed.

      Cover the bowl with plastic wrap or transfer the mixture into individual serving jars. Let it sit for about 5 minutes, then stir again to prevent clumping of the chia seeds.

        Refrigerate the mixture for at least 4 hours or overnight until it thickens to a pudding-like consistency.

          Once set, give the chia pudding a good stir to smooth it out. Serve it chilled, topped with whipped coconut cream, dark chocolate shavings, or fresh berries if desired.
